Tiger nuts, or Chufa or Earth Almond is an easy growing grass that forms edible nut like tubers underground with a sweet nutty flavour. similiar to cocunt or almond. Traditionally used as the main ingredient in Horchata, a spanish drink with is made up of soaked and ground tiger nuts, water and cinnamon, but is also great as a snack or added to dishes where nuts are required. Tiger Nuts are rich in starch, fat, sugar and protein. They are also high in vitamins E and C, as well as phosphorus and potassium. They are 20-36% oil; this oil is 18% saturated fat and 82% unsaturated fat, similar to the fat composition of olives.
